If you’ve grown up drinking chamomile tea for a sore throat, for relaxation, or for enjoyment, you may think you know what chamomile flowers taste like. But fresh chamomile flowers are a serious surprise: they are bright, striking, and sweet, intensely floral, with herbal and apple tones, and a bitter finish.

As a member of the Asteraceae family, the flowers (florets) are in fact the tiny, golden-yellow cluster of tufts in the center; the “petals” are modified bracts. The flavor is all in the florets, the golden center. Chamomile flowers can be used whole with the white petals, or can be pulled apart for tiny, apple-flavored, pollen-rich confetti.
