Vivid, enticingly bright flowers with tangerine flavor and color, gradating from a deep pumpkin-orange color towards the center, to a golden yellow halo at the perimeter. Occasionally, flowers will present with red patterning. Flowers are cut with the long green involucre (base) plus a few millimeters of stem. The whole flower is tender, but has a substantial texture and mouthfeel. For very delicate applications, individual petals can be used, or the central cluster of immature seeds can be removed and scattered like tangerine confetti.
