NASTURTIUM Leaf
Spicy, peppery leaves with a unique lily-pad shape and star-like veination which is flat on the topside of the leaf, and embossed on the underside. Color varies from leaf to leaf, a pastel lime green at the lightest, a deep blue-green at the darkest, with the underside a few shades paler. The texture is soft, flexible, and slightly waxy. Leaves can be used right side up, upside down, chiffonade, tiled, in infusion, or can be used to wrap ingredients, as in a dolma. Note that the leaf surface is very hydrophobic and sauces will bead up in contact. When raw, the leaf cannot effectively be dressed.
