New Zealand Spinach

A crisp and juicy leaf with a flavor reminiscent of spinach, but without the metallic twinge. Originally a beach-dwelling succulent, the leaves, especially when young, are covered in glittering papillae. In this species’ native habitat, the papillae sequester salt and minerals from beachfront soil. In the Pratum gardens, they add texture and minerality, but not salinity. Older leaves can grow acrid from mineral accumulation, but young leaves are tender, sweet, and shimmer as though they were dusted with snow.
