OKA HIJIKI
A native to Japanese salt marshes, oka hijiki is succulent, slightly salty, tart and tender when young, much like sea beans. The oka hijiki shoots that we sell represent the top 1-2” of fresh growth and look like little green fireworks, offering a delicate, spindly splash of color and interest.
