PEA VINE

Tender, sweet, delicate pea vines unmistakably evoke Spring. These lovely, buttery greens taste just like fresh peas from the garden and because they prefer cool weather, are one of the first and last offerings of the season. We harvest the top two sets of leaves on the shoots: the new, unfolding leaves, the barely matured leaves below them, and the playfully curly vine projecting from the tip.
