Salad Burnet

It’s hard to find such a uniquely pretty herb as salad burnet, a little-known member of the rose family (though you’d hardly know it). Rows of leaflets stand in a line along a central stem, led by a final leaflet at the terminus of the stem. It has such a presence in its appearance: all buttoned up, in tidy order, arranged in fluffy rows, like the feathered hats of a marching band. And on top of that, it has an equally unique flavor: mild cucumber and mint when young, a bit bitter in age, but still very interesting.
