Shiso Leaf

Any number of descriptors (clove, cinnamon, anise, basil) can be used to describe it, but like thyme or mint, shiso’s scent and character are completely distinctive and can’t easily be described in relation to other herbs. Shiso is a member of the mint family (Lamiaceae) and shares it highly aromatic, refreshing, floral traits. The leaves twist and curl, the surfaces are coated with fuzzy soft hairs, and the perimeters have beautiful deep teeth. Its mouthfeel is dry and fibrous, although this is milder in young leaves. it is a hardy leaf, which retains its integrity through cooking and pickling, remaining whole even after a year submerged in miso. At the height of the season, pluches and flower buds may be available by special request.
